What is the best way to wash off dried clay?
You don't necessarily have to wash it off! A great advantage of poultice is that when it is dry, it can simply be brushed out of the coat with a curry comb or a body brush. If you still want to wash it off, use a soft sponge and lukewarm water to slightly soften the crust beforehand.

What is the difference between cooling gel and clay poultice?
Cooling gel usually works through essential oils (like menthol) and alcohol, which triggers a very sudden, strong cold stimulus. It absorbs completely. Clay, on the other hand, cools much more gently, but significantly longer due to the hours-long evaporation process of the moist earth.
