Only Austrian rye is used for the rye flour Type 997 / R960 from the Leimüller mill. The rye is guaranteed GMO-free and is strictly controlled for pesticides. The rye flour is particularly suitable for gingerbread, hearty pastries and bread. The proportion of minerals in this rye flour is approx. 21%.
